Recipe: Hearty Puréed Vegetable Soups - super easy recipe base

A super easy recipe base  - just add your own winter vegetables.

Organic Ingredients: Choose from the following

  • Bone stock*: chicken, beef, fish or water
  • Allium vegetables: onion, garlic, leek, shallot
  • Root or hearty vegetables: carrot, pumpkin, potato, sweet potato, celeriac, parsnip, cauliflower, beetroot
  • Light or leafy vegetables: celery, zucchini, spinach, kale, silverbeet, chard, Asian greens, cabbage, asparagus, peas
  • Fresh herbs or spices such as Golden Turmeric powder
  • Oil: olive or coconut
  • Season: natural salt, freshly cracked pepper
  • Extra fresh herbs, finely chopped to serve

Method

Heat the oil in a pan over medium heat. Always start with an onion, garlic, leek or shallot and aromatics - dried herbs & spices or curry paste. Followed by root and hearty vegetables and then light and leafy vegetables. Season and top with enough bone stock or water to cover. Cook with the lid on. Once cooked (vegetables will be soft), purée in a high-speed blender. Serve with extra seasoning, fresh herbs or a delicious sauce or dressing.

  • Cabbage, apple, fennel seed and celery
  • Chard, zucchini, pumpkin and coriander
