Not only are these cookies quick and easy to make, you can pretty much use what you have on hand. This version is grain free but you can also use gluten free grains such as rolled oats or quinoa flakes. They are also sugar free though you can add any sweetener you like. Though when making banana cookies, the bananas are sweet enough. And they are dairy free and egg free, though I sometimes add an egg if I want to add protein and healthy fats.
Sunday Almond, Coconut & Banana Cookies
These are simple 21 Day Summer Cleanse friendly cookies.
The wet mixture:
- 2-3 mashed bananas
The dry mixture: (add enough dry mix to wet mix to form balls)
- Almond meal
- Desiccated coconut
- Cinnamon powder
Method
Add enough dry mixture to the mashed bananas to form into balls. Place the balls on a tray lined with paraffin free baking paper. Press the balls with a fork to gently flatten and give a nice design. Bake in a moderate oven until golden.
Store in the fridge for 3 days.

- sea salt flakes
- dried fruit
